Method
1.Wash the rice.
2.Cook the rice in boiling, salted wateruntil tender.
3.Drain well, removing much moisture aspossible.
4.Beat the egg yolks and seasoningtogether.
5.Prepare and finely chop the springonions.
6.Heat the sunflower oil and 15ml of thesesame oil in a frying pan.
7. Add the cooked rice, spring onions andegg. Stir immediately.
8.Continue to stir-fry the rice for 4-5minutes.
9. Add the soy sauce and a dash of sesameoil and mix thoroughly. Taste and seasonif required.
10. Serve in a hot dish garnishedappropriately.
