•Did you know that the freezing and boilingpoints of a substance change as the airpressure changes? At a lower airpressure, water will boil at a lowertemperature. This is why cake mixes oftenhave high-altitude directions. The lower airpressure at high altitudes allows the waterin the mix to begin to turn to gas at a lowertemperature. To prevent the cake fromdrying out, extra water is added to the mixand the oven is set to a lower temperature.
